You only need to authenticate once because it appears from the shared screenshots that all locked chats will be moved to a vault that is independent from your normal chats. WhatsApp's response to users who attempt to force access a chat after forgetting their passcode is currently unknown. The number of chats that can be closed at once, how the media shared in these conversations will be handled, and how notifications from locked chats will show are all still unknown.
Remember that the feature is still in beta and has not yet been made accessible to all users.
